Lucky's Salmon Wellington
A little spin on Wellington, with Salmon. It will warm up the entire kitchen!
Thaw the puff pastry so that you can handle it. Cut in half.
Preheat oven to 375 degrees.
Place the thawed pieces of puff pastry on an oiled baking sheet.
Pat the salmon dry and place each piece on the puff pastry.
Baste with your choice of Lucky's Honey Mustard. (Want a little spice? Try the Racha Honey Mustard)
Bring the edges of the pastry together and seal with egg wash. Use the rest of the egg wash on the top of the pastry.
Bake on the upper rack of the oven for 30 minutes, or until golden brown. Raise oven temperature to 400 degrees for 5 minutes to finish.
Serve with a fresh Spinach salad, Pan roasted baby vegetables, and nutty brown rice.
